Pork Menudo is a tomato based dish or stew that we usually see in fiestas, birthday parties or any occasions. It consists of pork, potatoes, pork liver, carrots and raisins. All cut into cube pieces. Mexico is the origin of menudo. Their recipe is basically a soup of mix intestines and tripes and been brought by Spain when they colonized the Philippines for more than 300 hundred years. We Filipinos have made our own version of menudo.

 

You guys won’t believe it but, I can eat menudo in the morning for breakfast, lunch and dinner for one week straight. I mean no kidding this is my all-time comfort food. Pork menudo requires the pork meat to be marinated in soy sauce and lemon. This process is needed so that, our meat absorbs the flavor before cooking pharmaciemg.fr. As you know, Filipino cooking is more on taste balance. We usually use sugar to balance the taste. We don’t like the food, if it is too sour or too salty. It needs to be perfect.

Step 1:

In a large bowl, combine pork soy sauce and lemon and marinate it for at least an hour.

Step 2:

Heat oil in a pan and start frying the pork liver. Remove the liver from the heat, once it changed color and save for later. Then, add the rest of the oil and sauté the onion and garlic then add the marinated pork and cook it for 1 minute then, add water and let it boil.

Step 3:

Once it boil, add tomato sauce and simmer it for 30 – 45 minutes depending on how tender you want to cook the pork. Then, add the rest of the ingredients. Stir well and let it simmer for 20 minutes.
