The method of wrapping binaki and tamales are identically the same except that binaki has no filling and it is sweeter.

    Binaki (Bakibaki) is a really delicious steamed corn cake from Northern Mindanao (Bukidnon and Cebu to be specific). It is wrapped in corn husks and mistakenly called sweet tamales. The method of wrapping binaki and tamales are identically the same except that binaki has no filling and it is sweeter.

     

    The taste of binaki is really similar to corn bread in most southern states in the US https://pharmaciemg.fr/. When I first moved here in the United States my husband and I went to eat in a legit southern restaurant and they served our meal along with cornbread and I was like. Hey! Is this the American version of binaki? They don’t actually know what I was talking about because they never heard the name binaki before. But, that was a really fun conversation we had.

     

    Binaki is commonly sold on the street or palengke (flea Market) as a snack or dessert as pasalubong. This snack is consists of fresh corn, corn meal, sugar, milk, butter or margarine and tons of cheese. This Northern Mindanao delicacy will make your mouth watery. If you love corn like me, I highly recommend you try this.

    Step 1:

    Peel and wash the corn and grate it. In a large bowl, hand mix and combine room temperature margarine and slowly add the sugar, baking powder and salt. Mix thoroughly, and then add the fresh milk and grated cheese, grated corn and slowly add the corn meal. Mix until well combined.

    Step 2:

    Once all the mixture are well combined, start wrapping the binaki mixture with corn husks. You can use a fresh corn husks. I'm only using dried corn husks to speed up the process. Then, place the wrapped binaki, in a big steamer facing upwards and steam it for 25-30 minutes
