“Pork and Tofu” or Tokwa’t baboy in tagalog is made up of boiled pork face and ears plus a slightly fried Tofu (tokwa) with soy sauce, vinegar, chopped onions and lots of ginger. There are some region in the Philippines that, don’t use ginger and substitute it with garlic. For this recipe, I will show you how to make a crispy pork and tofu, which I prefer a lot.
Also, Pork and Tofu is very well known in the Philippines as a side dish for Rice Porridge like (Lugaw, arroz caldo, and goto). They always served, these two together in a restaurant. Some Filipinos, love to eat this as a snack or (pulutan) while drinking beer. In my preference, I love to eat this dish with rice. I always make sure, I have plenty of sauce to sip and mix with my rice. It may sound so scary but, trust me, this is so good and I’m pretty sure, some Filipinos does the same thing too even my Husband (American).

Step 2:Cut the pork and tofu into small cube pieces. Using a frying pan, fry the pork first until, it turns to golden brown and become crispy. Remove from the heat, and use paper towels to drain the excess oil. Go ahead and fry the tofu, the same exact process and texture. Then, finally add the fried pork and tofu to the sauce mixture and stir it well. |
