Leche Flan (Caramel Custard) is a popular Filipino dessert made up of egg yolks and milk with caramel or melted brown sugar on top. We usually serve this on special occasions like birthdays and fiestas. In my house, I usually make this even if there is no occasions se her.
This is how my family make Leche Flan. I’m pretty sure, every household in the Philippines, has their own way, to make leche flan. The secret of making a flawless and smooth flan is by straining the mixture using a cheese cloth to remove the excess roughness of the chalaza or the (White Cholesterol part of the egg). We just like ours to be really smooth and has no bubbles. In my option, the bubbles will change the texture and will ruin the taste of this special and yummy dessert. Unless you like it that way.

Step 1:Separate the eggs, and place the yolk in a big bowl ( we will only use the egg yolk. Please, don't throw the egg white, and keep it to make make meringue cake later). Carefully beat the egg yolk and add condensed milk, evaporated milk, fresh milk, sugar, and vanilla extract. beat until well combined. Then, to make it smooth and bubble-free, use a cheese cloth strainer to remove the bubbles and excess egg membranes. |

Step 3:Pour the eggs and milk mixture in each llanera, and cover the top using aluminum foil. This step is very important so we don't get any trace of water dripping on the Flan. Then, place each llanera with the mixture in the steamer and let it steam for 20-30 minutes. Remove the flan from steamer and let it cool down and refrigerate i for at least 20 minutes. |
