Leche Flan

Leche Flan (Caramel Custard) is a popular Filipino dessert made up of egg yolks and milk with caramel or melted brown sugar on top. We usually serve this on special occasions like birthdays and fiestas. In my house, I usually make this even if there is no occasions.

 

 

This is how my family make Leche Flan. I’m pretty sure, every household in the Philippines, has their own way, to make leche flan. The secret of making a flawless and smooth flan is by straining the mixture using a cheese cloth to remove the excess roughness of the chalaza or the (White Cholesterol part of the egg). We just like ours to be really smooth and has no bubbles. In my option, the bubbles will change the texture and will ruin the taste of this special and yummy dessert. Unless you like it that way.

Leche Flan

Instructions
  1. Separate the egg yolks from the egg white (We will not use the egg white)
  2. Place the egg yolks in a big bowl and beat them smoothly.
  3. Add condensed milk, evaporated milk, sugar and vanilla. Beat them until well combined.
  4. Strain our mixture using a cheese cloth to smooth it out.
  5. Prepare individual llanera (medium size) and set aside.
  6. Prepare the Caramel. In a saucepan, add sugar and water. Stir continuously, until the sugar caramelizes or turn golden brown.
  7. Pour the caramel in each llanera and spread it evenly.
  8. Pour the mixture in each llanera
  9. Cover the top of the mold using an Aluminum foil.
  10. Steam the mold with the mixture for 30 minutes.
  11. After steaming, let it cool down and refrigerate it at least 20 minutes.
  12. Serve and Enjoy!
